Turkey Dirty Rice

Dirty rice is an excellent dish to make using
Thanksgiving turkey leftovers. If
you haven't used the giblets (the package of neck meat, gizzard, liver and heart packed in
the cavity) for gravy or something else, save them for this recipe. If you're a bit sheepish
about using this ingredient, it can be optional - although we recommend it since it does add the
'dirty' color to the rice and a depth to the dish's flavor.
This easy, casual dish calls out for a similarly easy, casual wine - such as the fun, lively
Beaujolais nouveau. Beaujolais Nouveau comes out just before Thanksgiving and is best drunk right
away, so this is the time of year to enjoy it! From the 2010 vintage we've featured the classic
Georges duBoeuf (it would be blasphemy not to!) as well as a selection from a smaller producer that
may be harder to find.

Turkey Dirty Rice Ingredients:
If using leftover or prepared
turkey: 2 lbs roasted meat (white and dark)
If cooking turkey: half a boneless turkey breast (2 lbs)
Turkey giblets (gizzard, neck,
heart - can be optional)
2 cups long grain rice
1 green bell pepper
1 red bell pepper
1 can kidney beans
2 celery stalks
1/2 cup green onions
4 cups of chicken stock low
¼ cup vegetable
1 tbsp cayenne
Turkey Dirty Rice Cooking
Instructions:If cooking turkey from scratch, start with step 1, or skip to 2
if using leftover or pre-cooked turkey.
1.) Preheat oven to 325 degrees. Roast turkey for 50 - 60 minutes, until a meat thermometer reads
175 - 180 degrees.
2.) Roughly chop turkey meat into large chunks. Dice green onion, bell peppers,
celery, onion and garlic.
3.) In a medium pot, add giblets and cover with water. Bring to a boil, and let
cook for 25 minutes.
4.) In a large pot, bring chicken stock to a boil and add rice. Reduce heat to low and
let simmer for 20 minutes or until rice is cooked through.
5.) In a large pan, add oil and heat over medium-high heat. Add celery, onion, peppers and
garlic and stir until soft - about 10 minutes.
6.) Add turkey meat, beans, green onion, paprika and cayenne to pan. Stir occasionally and cook for
7.) Drain cooked giblets and chop finely. Add chopped giblets and any juices with turkey mixture to
rice. Stir well.
8.) Season to taste with salt, pepper and hot sauce. Enjoy!
