No-Cook Appetizer Ideas

 
Make elegant entertaining a snap with these five simple, no-cook appetizer ideas. A little quick preparation and assembly and you'll be off to enjoying the party instead of slaving in the kitchen!

#1) Tapenade & Crackers

After spending a year in Provence, we are a little obsessed still with tapenade. Plus, it's super-easy to make and serve at home.

Ingredients:
1/2 lb pitted oil-cured black olives (kalamata OK as a substitute)
2 tbsp capers
2 anchovy fillets
2 cloves garlic
2 tbsp olive oil
1/2 tsp dried thyme
1 lemon
1 package seeded crackers

Instructions:
1.) Finely mince the thyme, and peel and rough chop the garlic.
2.) Add olives, capers, anchovies, thyme and garlic to a food processor. Pulse to roughly chop.
3.) Add olive oil and juice from the lemon and combine again. Adjust amount of olive oil to get to your preferred consistency.
4.) Serve in a bowl with the crackers on the side!

#2) Apple Slices & Brie

This one not only requires no cooking, it only requires slicing.

Ingredients:
3 granny smith apples
8 oz brie

Instructions:
Slice the granny smith apple into relatively flat wedges. Top each apple wedge with a slice of brie. Done!

#3) Bruschetta

Simple and always a crowd-pleaser, you'll want to make the tomato mixture in advance so the flavors can mix.

Ingredients:
1 fresh baguette
4 tbsp olive oil
3 tomatoes
1 yellow onion
2 cloves garlic
a handful of fresh basil

Instructions:
1.) Chop the tomatoes, onion and basil. Finely mince garlic. Mix all together with 2 tbsp of the olive oil, and a pinch of salt. Let marinate 2-4 hours.
2.) Slice the baguette - on the diagonal works well so you get more surface area for toppings.
3.) Brush each bread slice with the remaining 2 tbsp olive oil, then top with tomato mixture.
(Note: If you have time, you can pop the brushed bread first into the oven or on the grill for a few minutes to toast it first.)

#4) Pesto Chicken Crostini

What makes this a no-cook appetizer is using storebought rotisserie chicken. No one will know!

Ingredients:
1 fresh baguette
1/2 rotisserie chicken from the store
1 bunch fresh basil leaves
1/2 cup toasted pine nuts
1/2 cup grated parmesan
1/2 cup olive oil (for pesto)
1 clove garlic
1 lemon
4 oz herbed soft cheese, like Boursin

Instructions:
1.) Pick meat off the chicken, removing skin. Rough chop and reserve.
2.) Add basil, pine nuts, parmesan, olive oil, garlic and juice from the lemon to a food processor with 2 tbsp salt and fresh cracked black pepper. Mix until consistency becomes smooth.
3.) Toss chicken with pesto so it's well-coated.
4.) Slice baguettes on the diagonal, spread a thin layer of herbed cheese (it helps hold the chicken on it), then top with the pesto chicken.

#5) Smoked Salmon on Cucumber

This recipe also falls under the extra-simple category - with only slicing/spreading required.

Ingredients:
1 cucumber, peeled
8 oz smoked salmon
3 tbsp cream cheese

Instructions:
Slice the cucumber, then spread a thin layer of cream cheese onto each slice. Cut the salmon into pieces slightly larger than the cucumber slices. Top each slice with a piece of salmon, folding it over to make a nice presentation.
